Chicken Goujons, brown bread & soup

In yesterday’s Healthy Options group we made healthy chicken Goujons. To make them we coated chicken breast strips in flour followed by egg (seasoned with salt & pepper) and dipped it in a breadcrumb and parmesan mix. Then we popped it in the oven for 20 minutes.  Delicious and very easy to make, no need to buy frozen processed goujons when these ones taste just as good and require very little prep.

We also made our barley and chunky veg soup with homemade brown bread which was really popular the last time for very good reason.

It was great to have Paddy & Martin taking part and as you can see, from the photos, the bread was a real crowd pleaser for the mornings break.

Next week we will be making pizzas with a cauliflower base. Yes – cauliflower! Interesting…
